Horseradish Tuna Salad

Inspired by the viral tuna salad that is making it’s way around social media, this is a more pantry and cupboard friendly version. Simple ingredients most will have available. We replace classic celery with frozen peas and corn and we add some kick with the horsey sauce. You really can’t go wrong here, and I can guarantee this will be the new go to recipe for your tuna melts and salads. I personally prefer to build some custom bites on some crispy crackers. Farm Fresh Apple Crisp

Our recent family outing was to a local apple farm. The Honeycrisp, Gala, Blonde and Jonagold apples were ready for pickin’, and we brought home several bags for eating and baking.

Three (monsterously large) honeycrisp apples were cored and chopped to make this insanely amazing farm fresh apple crisp. 

We again opted to use gluten free and dairy free ingredients so our child could partake. This can be made with or without the substitutions and the results will be equally incredible.

Chocolate Chip Pumpkin Banana Muffins

Those browning banana’s can turn into some real magic with this allergy conscious muffin. Banana, pumpkin puree, gluten free flour and diary-free chocolate chips create a extremely moist and tasty treat.

If you do not have allergy concerns you can also follow this recipe one-to-one with your standard AP flour and chocolate chips. Either way these are delicious and fun for everyone!

Fruity Pebble Ice Cream (Dairy free)

A childhood favorite cereal is our inspiration for this dairy-free summer treat. Soymilk, vanilla and coconut milk infused with fruity goodness. This is a simple and fun excursion that has a light and creamy texture that is sure to restore those summer time vibes.

Light Limoncello Ice Cream

Inspired by my childs current obsession with lemon, this light version of a limoncello highlights creamy vanilla and bright lemon flavors.

Egg Nog Sugar Cookies

This is a traditional cookie that our child loved this past year. Combining a rich creamy egg nog infusion into the traditional sugar cookie base is a true delight.

Cinnamon Coconut Cornbread

Cornbread goes great with Chili or BBQ. This is a dairy free and wheat free (no use of flour) recipe. Our child is being tested for some possible dairy and wheat allergies. 90 days of dairy and wheat elimination can be a challenge when trying to plan meals for a family. We wanted a corn bread side that was safe for our young one but also enjoyable for everyone and anyone.

Pan Style Breadsticks

This has become one of our weekly Saturday or Sunday dinner additions over the the last couple months. Usually served aside a saucy pasta dish or for an appetizer on a movie night.

These mimic the fluffy pan style bread stick we all are familiar with form some of the popular chain pizza joints.

While these need to be prepped about 8 hours before you bake, they are pretty hands off. About 10 min of set up, a couple check-in’s and a 10 min bake and you are set!

Red Velvet Smoothie

Red velvet is one of those flavor profiles we used to indulge but could never hone in on the actual individual ingredients.

This smoothie takes the mystery out of red velvet with a healthy spin. This is a great quick infusing of beets, cocoa and berries for some added sweetness.

Break this one out for a quick breakfast or a satisfying guilt free dessert.

We have also added an optional cream cheese based “frosting”, which was used as a finishing garnish to emulated a slice of cake. While the cream cheese is optional, it really does add a depth and richness that completes the red velvet and cream cheese frosting combination that is all so common.

Sugar Dusted Cranberries

Cranberries are often associated with the holidays. A seasonal delight that are highlighted between Thanksgiving and Christmas.

Their vibrant red color also adds a festive touch to the table.

Cranberries are a staple ingredient in many traditional holiday recipes, but they can shine on there own in their natural state with just a little help from confectioners sugar. This simply sweet addition is essential to counter out the cranberries’ natural tartness.
