Red Velvet Smoothie

*Optional Cream Cheese 'Frosting'*

Red velvet is one of those flavor profiles we indulge in often when we are choosing cakes or cupcake flavors. The red hues highlighted by rich and decadent cream cheese frosting is difficult to resist. But was has always been even more difficult was honing in on the actual individual ingredients that make up the sweet and tangy treat.

This smoothie takes the mystery out of red velvet with a healthy spin. This is a great quick infusing of beets, cocoa and berries for some added sweetness and greek yogurt for that tangy and sour.

Break this one out for a quick breakfast or a satisfying guilt free dessert.

We have also added an optional cream cheese based “frosting”, which was used as a finishing garnish to emulated a slice of cake. While the cream cheese is optional, it really does add a depth and richness that completes the red velvet and cream cheese frosting combination that we all love so much.

 

 

Can't "beet" these benefits!

Beets are a nutritional powerhouse, packed with essential vitamins, minerals, and antioxidants. They are a great source of folate, manganese, potassium, and vitamin C. 

Additionally, beets contain nitrates, which have been linked to improved blood flow and lower blood pressure. 

Mixed berries, such as strawberries, blueberries, and raspberries, are rich in vitamins, fiber, and antioxidants. They provide a burst of flavor along with a host of health benefits, including boosting immune function, supporting heart health, and improving digestion. 

Greek yogurt, known for its creamy texture and tangy taste, is an excellent source of protein, calcium, and probiotics. It promotes gut health, aids in digestion, and helps maintain strong bones and muscles. Combining all these flavors to recreate that red velvet flavor profile results in a a delicious and wholesome snack or meal that nourishes the body and satiates those sweet cravings, without any of the guilt.

Assembly the ensemble

It doesn’t get much easier then this!  We are going to simply measure out our ingredients and blend them all up into a quick and wholesome smoothie texture. 

You have some options when it comes to the cream cheese portion of this flavor profile. While you can omit it completely, the cream cheese does round out the experience and also adds some next creaminess to the texture of the smoothie.

Of aesthetic purposes we chose to mix some vanilla greek yogurt and cream cheese up with a hand mixture until smooth. They poured out have of our smoothie into a glass and then pipped a rim of ‘frosting’ cream cheese mixture around teh outside to give that appearance of filling in a cake.
Then carefully poured the reset of the smoothie into the glass. Topped it off with the remaining cream cheese and yogurt ‘frosting’.


Normally, for convenience we like to add some cream cheese to the blender and just let the flavor alone do empower the smoothie.

Red Velvet Smoothie

Cocoa, berries, greek yogurt, beets and cream cheese smoothie make up a health conscious version of the red velvet flavor profile we all love so much (usually in a cake form).

Equipment

  • 1 Food Processor

Ingredients
  

Smoothie

  • 1/3 cup canned beets
  • 3/4 cup vanilla Greek yogurt
  • 1/2 cup Frozen berries (cherries or mixed berries)
  • 1 tbsp cocoa powder
  • 1/2 cup milk (any preferred milk)
  • 2 oz cream cheese You may add this into the smoothie when mixing or add it to our optional cream cheese "frosting" topping to add to the top of the smoothie later.

Cream Cheese Frosting

  • 2 oz cream cheese softened
  • 1/4 cup Greek yogurt
  • 1/2 tsp vanilla extract Optional. if you use vanilla flavored Greek yogurt you can omit this.
  • 2 tbsp powdered sugar Replace with any sugar substitute, but it may not be as smooth in texture

Instructions
 

Smoothie

  • Combine canned beets, vanilla Greek yogurt, frozen cherries, cocoa powder to food processor.
  • Start to blend
  • Add milk until you reach a preferred consistency (I test by trying to drink through a straw).
  • If you want a sweeter flavor, add honey or sugar or a sugar alternative (I like Allulose) to taste.

Cream Cheese Frosting

  • Mix softened cream cheese, Greek yogurt, vanilla extract (optional) and powdered sugar (or substitute sugar) with hand mixer until smooth.
  • Pipe on top of smoothie.
    NOTE:
    For the layered-cake appearance
    Pour half a glass of smoothie, pipe some frosting around the inside of the cup so that the frosting sticks to the glass (no need to pipe into center of the smoothie as it may just sink).
    Pour remaining smoothing into the center to try to retain the frosting on the glass. You now have a smoothie that looks like a layered-cake.
