Fruity Pebble Ice Cream (Dairy free)

A childhood favorite cereal is our inspiration for this dairy-free summer treat. Soymilk, vanilla and coconut milk infused with fruity goodness. This is a simple and fun excursion that has a light and creamy texture that is sure to restore those summer time vibes.

Ninja Creami

This recipe was made using a Ninja Creami ice cream and cold drink appliance. We highly recommend this product. It helps to secure the proper texture of your dessert and ice drinks. 
If you have a food processor it can be used to as well, but your results for the final texture may vary.
Our child is currently unable to eat dairy and wheat. They love ice cream and we were looking for something that we could use to make sweet treat without breaking the bank on specialty pints.  We are now able to prepare ice treats for them using soy milk, coconut milk and other non-dairy add-ins.  It has been a great way to help them not feel like they are missing out due to their current diet restrictions.
This recipe was made non-dairy buy substituting can of unsweetened-coconut milk where we would usually use heavy cream and the soymilk where we have used other whole or skim milk in our recipe.  The coconut with vanilla really gives a nice freshness to the flavor profile.  

Summer Is Here All Year

On our last grocery shopping excursion our child brought over this box of “Summer Fruit Pebbles” and insisted we put it in the cart.  We obliged, as it met the allergy requirements for there current doctor ordered elimination diet (and they were being on good behavior).  No dairy and no wheat for the next 3 months. 

It is summer time and that can be a challenge with all the sweet dairy treats. We recently obtained a Ninja Creami and have been brainstorming on different way to make various ice creams for both ourselves and our child.

Looking around the cupboards we decided to embark on a fruity pebble adventure.  It was worth it!

Fruit Pebbles is a Classic

Fruity Pebbles is a popular breakfast cereal produced by Post Consumer Brands. It’s known for its vibrant, rainbow-colored appearance and fruity flavor. There are also many generic brand versions you can find at your local grocer. It’s a fun breakfast or dessert to occasionally indulge in.

Fruity Pebbles was introduced by Post Consumer Brands in 1971. It was inspired by their earlier cereal, Cocoa Pebbles, which debuted in 1970.

Fruity Pebbles has a distinct fruity flavor, often described as a combination of fruit flavors like orange, lemon, lime, cherry, and berry.

Fruity Pebbles has expanded to include variations such as Marshmallow Fruity Pebbles, which includes small marshmallow pieces mixed with the cereal.

Fruity Pebbles is not considered particularly nutritious as it is high in sugar and low in fiber and protein. It’s typically enjoyed as a treat or occasional breakfast rather than a daily staple. 

For this recipe it is a perfect sweet and fit. We have reduced the normal amount of sugar we usually add to a vanilla ice cream, knowing that in the end we will have sweet crispy goodness mixed-in that will provide a fruity sweetness.




Strain the fruity milk into a bowl and discard the soggy cereal (eat it if you like soggy cereal)

Optional Flavoring Method

This next step is completely optional, as it has some positives and negatives. When we made this recipe we decided to incorporate one of my favorite parts of cereal eating… the left over cereal flavored milk. It is always my favorite part of finishing off a bowl of sugary cereal.

We want to have about 1 cup of soymilk in the final mixture before we freeze. To incorporate flavor into the milk we poured 1 and 1/2 cups of soymilk into a cereal bowl and then add 1 cup of Fruity Pebble cereal.  The blue and red summer version has the same flavor profile as the normal everyday multicolored and brighter version.  This summer mix would be great for American 4th of July celebration. 

We let the bowl sit in the fridge for about 15-20 min. Let all the flavor infuse. 

The downside to this method is that you loose some of the soymilk that absorbs into the cereal. While we attempt to strain as much as possible out of the cereal, its very difficult to get much of that volume back. So we will have some loss of milk and unless you love super soggy cereal, that will probably also be discarded (but there is no judgement here!)

The end result will be some extra flavorful soymilk for the base of our ice cream.

We Have Options

There are some optional steps in this recipe. As noted below, we do not have to flavor the soymilk with the fruity pebbles if there is concern for waste of food or just time contraint, we still end up with a great vanilla base that will still be carried with the crispy Fruit Pebble cereal we mix-in at the end before serving.

Also, the recommendation for all creami recipes is to freeze for 24 hours. Sometimes we don’t have that type of foresight. We want a treat for our after dinner TV time or date night.  If time is an issue, we can minimize this down to 6 hours if we are willing to settle for a milkshake. 

At around 6 hours we have had scoopable think milk shake consistency with our ice cream recipes. Place in a Ninja Creami or a food processor and and if needed add a small amount of soymilk at a time until a desired consistency is reached. 

The last thing you will mix-in is the crispy Fruity Pebble cereal with any method you choose.

We have also made many of our ice creams starting with a vanilla flavored soymilk base. We still add the sugar and the vanilla extract as normal, but the vanilla notes will be a bit greater if you start with a vanilla base.

Fruity Pebble Ice Cream (dairy free)

Fun and sweet dairy free treat that uses Fruity Pebbles for some great fruity flavor and light crispy goodness. Ninja Creami recipe.

Equipment

  • 1 Ninja Creami - May also use a food processor, but expect a different texture. This could be made into a milk shake with some extra milk as well.
  • 1 Freezer safe container

Ingredients
  

  • 1 1/2 cup Soymilk
  • 1/2 cup un-sweetened coconut milk
  • 1 1/2 cup Fruity Pebble cereal - 1 cup for flavoring milk / 1/2 cup reserved for mix-in after freezing.
  • 2 tbsp sugar
  • 1 tsp vanilla extract

Instructions
 

  • Optional Flavoring Step: Combine 1-1/2 cups of soymilk and 1 cup Fruity Pebbles cereal into a bowl.
  • Set bowl in fridge for 15-20 min
  • Strain soymilk through colander (strainer). Lightly press as much liquid out as possible. You should have about 1 cup of soymilk after this process.
  • Combine soymilk, un-sweetened coconut milk, sugar, vanilla extract in a freezer safe container.a
  • Freeze for 24 hours (6 hours if you would like a milkshake)
  • Spin in Ninja Creami on Light Ice Cream mode 2-3 times until there is a well forming into the center.
  • In the center pour in 1/2 cup Fruity Pebble cereal and use mix-in setting.
  • Scoop, serve and Enjoy

Notes

*NOTE: If you choose not to flavor the soymilk with Fruity Pebbles cereal, you can simply mix all ingredients and use 1 cup of soymilk instead of the 1 1/2 cups. We start with more due to the cereal absorbing some of the soymilk during the flavoring process. 
Vanilla soymilk is also really good to use as a base.
