Fruity Pebble Ice Cream (dairy free)

Fun and sweet dairy free treat that uses Fruity Pebbles for some great fruity flavor and light crispy goodness. Ninja Creami recipe.

Equipment

  • 1 Ninja Creami - May also use a food processor, but expect a different texture. This could be made into a milk shake with some extra milk as well.
  • 1 Freezer safe container

Ingredients
  

  • 1 1/2 cup Soymilk
  • 1/2 cup un-sweetened coconut milk
  • 1 1/2 cup Fruity Pebble cereal - 1 cup for flavoring milk / 1/2 cup reserved for mix-in after freezing.
  • 2 tbsp sugar
  • 1 tsp vanilla extract

Instructions
 

  • Optional Flavoring Step: Combine 1-1/2 cups of soymilk and 1 cup Fruity Pebbles cereal into a bowl.
  • Set bowl in fridge for 15-20 min
  • Strain soymilk through colander (strainer). Lightly press as much liquid out as possible. You should have about 1 cup of soymilk after this process.
  • Combine soymilk, un-sweetened coconut milk, sugar, vanilla extract in a freezer safe container.a
  • Freeze for 24 hours (6 hours if you would like a milkshake)
  • Spin in Ninja Creami on Light Ice Cream mode 2-3 times until there is a well forming into the center.
  • In the center pour in 1/2 cup Fruity Pebble cereal and use mix-in setting.
  • Scoop, serve and Enjoy

Notes

*NOTE: If you choose not to flavor the soymilk with Fruity Pebbles cereal, you can simply mix all ingredients and use 1 cup of soymilk instead of the 1 1/2 cups. We start with more due to the cereal absorbing some of the soymilk during the flavoring process. 
Vanilla soymilk is also really good to use as a base.
